Wonder Beet Pickled Eggs
Beet-pickled eggs have long been a staple, not only because of the wonderful flavor, but also for that amazing ruby red color that gets imparted to the eggs! Now add your favorite Wonder Beet juice, and you’ve got a real winner to try for your next gathering!

Ingredients:
- One dozen eggs
- One bottle Wonder Beet juice (flavor of your choice)
- 8 oz. distilled white vinegar
- 4 garlic cloves, peeled and crushed
- 1 tsp. dried oregano
- 1 tsp. kosher salt
- (2) 22-oz. mason jars
- Everything bagel seasoning, for serving
Directions:
Place eggs in a large saucepan and fill with water until it covers eggs. Place on high heat and once it comes to a boil, remove from heat and cover for ten minutes. Get an ice bath ready in a large bowl. After 10 minutes, place eggs in ice bath for 3 minutes and quickly peel the eggs.
Pour Wonder Beet Juice in a small saucepan. Fill Wonder Beet Juice bottle with the same amount of vinegar and ad it to the saucepan. Add garlic cloves, oregano and salt and allow to come to a low boil.
Place peeled eggs in both mason jars and pour in hot beet brine. If necessary, top each jar with more water to cover eggs completely.
Tighten the lid to both mason jars and refrigerate for 3 to 4 days before eating. Serve with Everything Bagel Seasoning, if desired.
