Wonder Melon Tapioca Pudding

Four people

Ingredients:

  • 1 Cup mini tapioca pearls
  • 1 Bottle Wonder Melon juice
  • 1/2 Can sweetened condensed milk
  • 1 Can unsweetened coconut milk
  • Diced watermelon, for garnish

Directions:

In a large saucepan, combine tapioca pearls with 6 cups of water. Allow to come to a simmer and simmer for 10 minutes. Then turn off the heat and let rest for 3-4 minutes.

In the meantime, combine Wonder Melon juice, sweetened condensed milk and coconut milk in a blender and blend until combined.

Pour tapioca into a Kine mesh strainer and wash with cold water.

Combine tapioca with Wonder Melon mixture and place in serving glasses. Refrigerate for 4 hours or preferably overnight.

Garnish with fresh diced watermelon and serve. Serves 4.
