Wonder Lemon Pancake Cake
This Wonder Lemon Pancake Cake recipe is “stacked” with flavor and fun! The citrus buttercream holds it all together and is wonder-fully delicious! Works with any Wonder Lemon flavor.

Ingredients:
- 2 cups unsalted butter, softened
- 6 cups confectioner's sugar
- 4 Tbsp.. Wonder Lemon juice (any flavor)
- 3 tsp. lemon zest
- 1/4 tsp. salt
Directions:
Follow the instructions on your instant pancake mix by replacing the liquid ingredient with Wonder Lemon Juice. Add any extra ingredients as indicated on pancake mix package.
Make a stack of pancakes, (about 8-12) about 6-8 inches wide, and place in refrigerator to fully cool.
In the meantime, make the citrus buttercream frosting by beating the butter until fluffy and adding the rest of the ingredients. Beat until combined.
Assemble your pancakes by spreading buttercream on top of each pancake layer and frosting the sides until you have a fully frosted “cake”.
Crush freeze-dried fruits and sprinkle throughout and drizzle maple syrup before serving.
